Most food truck financial templates model one blended daily-revenue number and call it done. A real truck doesn't work that way – it runs a weekly rotation across a business-district lunch stop, a neighborhood dinner slot, the occasional weekend event, and private catering, and each of those carries a genuinely different customer count, ticket size, and cost structure. Festivals take a booth fee; a lunch stop usually doesn't. This model keeps every stop type visible from customer count through revenue, so it's possible to see which stops on the route are actually worth keeping.
Year 1 DSCR clears the 1.25x SBA/equipment-financing minimum at 1.76x, backed by a full revenue-cushion stress test, current ratio, debt-to-equity, and interest coverage on the DSCR & Lender Ratios tab – a real result from the stop-rotation build, not a static figure. The recurring costs specific to mobile food service – commissary kitchen rental (required by health code in most jurisdictions), per-jurisdiction permits, health/fire inspections, propane, and event/venue booth fees – get their own dedicated Permits, Licenses & Commissary tab instead of being folded into a generic "other expenses" line.
Change the truck's rotation, menu pricing, or financing terms on the Assumptions tab and it flows through Location & Stop Rotation, Revenue Build, and Food Cost & COGS into a full 3-statement model, balance-checked every month, then into DSCR & Lender Ratios, a 22-ratio Full Ratio Suite, a DuPont ROE Decomposition, Scenario & Sensitivity Analysis, and a Business Valuation & Exit tab with both a DCF and a comparable-multiple cross-check.
Twenty-five tabs cover the full picture, including Staffing & Payroll sized for an owner-operator plus 1-2 hourly crew (no unnecessary management layer), CapEx & Depreciation for the truck and kitchen build-out, an Executive Dashboard, and a Funding Requirement tab.
Every financing rate, cost benchmark, and wage is sourced to 2026 data – SBA 7(a)/equipment-financing rates, BLS-sourced crew wages, and the 28%-33% healthy food-truck food-cost range. Built as a native .xlsx, verified across Excel, Google Sheets, LibreOffice, WPS, and ONLYOFFICE. Confirm your specific jurisdiction's permit fees and rules before relying on it for a real application.
